     Celery Salad with Feta and Mint

Ingredients
Celery - 6 large stalks cut into 1/2 inch slices
1/2 small red onion - thinly sliced
2 tbsp extra virgin olive oil
2 tbsp lemon juice
2 tbsp lemon zest
Coarse salt
Ground pepper
1/3 cup Feta
3 tbsp thinly sliced fresh mint leaves
 
Instructions
Combine all ingredients. Toss the salad!
