     South Beach Diet Snack Mix

Ingredients
3 cups regular toasted oat cereal
3/4 cup Parmesan cheese
2/3 cup sliced natural almonds
3 Tbsp EVOO
3/4 tsp salt
1/2 cup roasted unsalted soy nuts
 

Instructions
Heat the over to 350. In a large bowl, toss together the cereal, Parmesan, almonds, oil, and salt until well combined. Transfer to a large rimmed baking sheet and spread out in a single layer. Bake, stirring twice, for 20 minutes, or until the cereal is crisp and fragrant.
Transfer to a serving bowl and add the soy nuts, tossing to combine. Cool briefly and serve, or store in the airtighter container at room temperature.
