     Avocado Casesar Dressing

Ingredients
1 medium avocado
1 1/2 cups water
1/2 cup lemon juice
1/4 cup vegan Parmesan alternative
1 tsp. salt
1 clove garlic
1/4 tsp. ground black pepper
 

Instructions
Wash the avocado and cut in half. Scoop out the flesh, and put it into the blender.
Add the remaining ingredients, and blend on low speed for a few seconds. Switch to high speed, and blend until smooth and creamy. Transfer the dressing to an attractive serving bowl and serve with a ladle. Refrigerate leftovers. Will keep well for 2 to 3 days.
