scant 2 cups all-purpose flour, plus extra for dusting
3 1/2 oz. butter, diced
1 tbsp. golden superfine sugar
1 egg yolk, beaten with 1 tbsp. water
Instructions
Sift the flour into a large bowl. Add the butter and
rub it in with your fingertips until the mixture is
resembles fine bread crumbs, then stir in the
superfine sugar. Stir in the beaten egg yolk.
Knead lightly to form a firm dough. Cover with
plastic wrap and let chill in the refrigerator for 1
hour 30 minutes.
Roll out the dough onto a lightly floured counter
and use to line an 8 inch tart pan. Proceed as in
main recipe.
