     chocolate chip & fudge banana ice cream

Ingredients
4 ripe bananas
juice of 1/2 lemon
1 cup golden superfine sugar
generous 2 cups whipping cream
generous 1/2 cup semisweet chocolate chips
3 1/2 oz. fudge cut into small pieces, plus extra to decorate
 

Instructions
Peel the bananas and chop them coarsely, then place in a food processor with the lemon juice and sugar. Process until well chopped, then pour in the cream and process again until well blended.
Freeze in an ice-cream maker, adding the chocolate chips and fudge just before the ice cream is ready. Alternatively, pour the mixture into a large freezer proof container, then cover and freeze for about 2 hours, or until just frozen. Spoon into a bowl and beat with a fork to break down the ice crystals. Return the ice cream to the freezer for an additional 2 hours, or until almost firm. Remove from the freezer, beat again with a fork, and stir in the chocolate chips and fudge. Return to the freezer for an additional 2 hours, or until firm.
Transfer the ice cream to the refrigerator 15 minutes before serving. Scoop into small bowls and decorate with extra fudge pieces. Serve.
Serving Suggestions
It is important to add lemon juice to help prevent the bananas turning brown.
