Preheat oven to 400 degrees. Grease a large baking sheet.

Sift dry ingredients into a large bowl. Cut in butter until mixture resembles rolled oats. Cover and refrigerate 20 min.

Make a well in the center of the mixture and add enough buttermilk to hold it together. Stir quickly with your fingers until just combined. Turn mixture into a lightly floured board and roll into a 3/4 inch thick square.

Cut as many biscuits as you can with a biscuit cutter and place on greased baking sheet, about one inch apart. Brush tops of biscuits with the cream. Bake 13 to 15 min, or until golden.
