Preheat oven to 350 degree F. Mix Yolks and 1/4 of sugar together in bowl. In pan, cream 1/2 c. sugar and vanilla. Dissolve on medium-low heat. Continue until steams.
Slowly add cream to yolk; stir constantly; whisk curd gently into mix. Pour into ramekins and bake in hot H20 bath for 35-40min. Add coffee syrup or espresso powder for extra flavor.
