Cook or bake sweet potatoes until tender and scoop
out the insides and place in large bowl and mash.
Mix softened butter into mashed potatoes with sugar,
eggs, vanilla and milk.
Pour mixture into casserole dish.
Bring the cream to a simmer in a small heavy sauce
pan. Add the brown sugar and stir until dissolved.
Cook the mixture over medium heat until it reaches
softball stage on candy thermometer.
Remove from heat and beat in butter and chopped
pecans. Pour this over the sweet potatoes. Bake
until very hot.
