     Roasted Salmon with Citrus and Herbs

Ingredients
1 tablesppon finely chopped fresh parsley
1 tablespoon finely chopped fresh thyme
1 tablespoon minced garlic
2 teaspoons grated lemon rind
2 teaspoons grated lime rind
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1 (2 1/4 pound) salmon fillet
cooking spray
 

Instructions
Preheat oven to 400 degrees.
Combine the first 7 ingredients in a small bowl. Place salmon on the rack of a broiler pan coated with cooking spray; place rack in pan. Rub parsley mixture over salmon. Bake at 400 degrees for 15 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
