     Citrus and Scallop Salad

Ingredients
1 lb sea scallops
3/4 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
1 tbsp lemon juice
2 navel orances, peeled and sectioned
1 ruby red grapefruit peeled and sectioned
1/3 cucumber halved lengthwise ans sliced
3 scallions, sliced on the diagonal
 
6 pitted black olives chopped
4 cups lightly packed baby arugula

Instructions
Sprinkle the scallops with 1/2 tsp of the salt and pepper. Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the scallps to the skillet and cook until browned and just opaque throughout, about 2 minutes on each side.
Meanwhile, whisk toggether the orange juice, oil, lemon juice and the remaining 1/4 teaspoon salt in a large bowl. Add the oranges, grapefruit, cucumber, scallions, and olives; toss to coat evently with the dressing. add the scallops and gently toss to combine.
