Pierce pork all over; insert garlic slices into holes. Rub lime juice into pork. Combine remaining ingredients in resealable bag. Add pork and marinate in refrigerator 8 hours.
Place pork in shallow roastin pan, roast at 425 for 20 minutes; basting often with marinade. Lower heat to 350 and roast 20 minutes; basting often.
Let rest 10 minutes before slicing.
