     Sausage Kale Soup

Ingredients
3/4 C. chopped onion
1 T. olive oil
2 garlic cloves, minced
4 C. reduced sodium chicken broth
2 medium potatoes, peeled and cubed
1/4 t. salt
1/4 t. pepper
1 bunch kale, trimmed and chopped
1 can white kidney beans or cannellini beans, drained and rinsed
 
1/2 lb. reduced fat fully cooked Polish sausage or turkey kielbasa, sliced

Instructions
In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 min. Add the next 4 ingredients. Bring to boil. Reduce heat; cover and simmer 10-15 min. or until potatoes are tender.
Using a potato masher, mash potatoes slightly. Add the kale, beans and sausage; cook over medium-low until kale is tender.
