     Onion Dijon Pork Chops

Ingredients
4 (5 oz.) boneless pork loin chops
1/4 t. pepper
3/4 C. thinly sliced red onion
1/4 C. water
1/4 C. cider vinegar
3 T. brown sugar
2 T. honey Dijon mustard
 

Instructions
Sprinkle chops with pepper. In large nonstick skillet coated with cooking spray, cook chops over medium heat 4-6 min. each side or until lightly browned. Remove and keep warm.
Add remaining ingredients to skillet; stir to loosen browned bits. Bring to a boil; cook and stir for 2 min. or until thickened. Return chops to pan. Reduce heat; cover and simmer 4-5 min. or until done.
