Boil the diced shallots and potatoes together until
fluffy
|
|
|
once the potatoes are soft and fluffy drain in a
colander and mash together with butter and milk and
slowly add 2/3 of the grated cheese
(set aside the rest).

|
When everything has combined place the mix into a
baking dish with the cheese sprinkled on the top
with tomatoes placed in the centre.
|
|
|
Bake this in the oven 180c/gas4 bake in centre of
the oven until the cheese has completely melted and
crisp so aproximatley 10 -15 mins.
