     One-Pan Roasted Pork Supper

Ingredients
1 lb. sweet potatoes, peeled, cubed
1 lg. red onion, cut into thin wedges
1/2 cup light catalina dressing
1 1/2 tsp. dried thymes leaves, divided
1 pkg chicken stuffing
1 1/2 cup water
2 small pork tenderloins
 

Instructions
Preheat oven to 375 F. Toss sweet potatoes, onions w dressing and 1/2 tsp of thyme. Arrange in 15x10x1 baking pan.
Bake 10 minutes. Meanwhile, combine stuffing and water. Cut each tenderloin diagonaaly into thirds. Push vegetables to edge of pan.
Spoon stuffing into center; top with meat. Sprinkle remaining thyme over meat. Bake 45-50 minutes.
