     Minestrone Soup

Ingredients
8 cups vegetable stock
2-14oz. can Italian tomatoes with juice
15 oz. can kidney beans
15 oz. can cannelloni beans
1 can tomato paste
1 cup carrots ( cut into small slices)
1 cup finely shredded cabbage
1 cup celery ( cut into small slices)
1 cup diced onion
 
1/2 cup fresh parsley (minced)
4 cloves garlic (minced)
1/2 tsp dried oregano, basil, & thyme
1 tsp Celtic or Himalayan salt (or to taste)

Instructions
1.Drain and rinse garbanzo, kidney, & cannelloni beans 2. Mince garlic & parsley 3. Chop carrots, onion, celery, & cabbage 4. Add all ingredients to crock pot and cook 8-10 hours on low or 4-6 hours on high
