     Quick Chicken and Dumplings

Ingredients
1 tbsp butter
1/2 cup chopped onion
2 cups roasted, skinless chicken breast
10 oz bag frozen mixed vegetables, thawed
1 1/2 cup water
1 tbsp flour
1-14 oz can fat-free, low sodium chicken broth
1/4 tsp salt
1/4 tsp pepper
 
1 bay leaf
8-6 inch flour or corn tortillas cut into 1/2 inch strips

Instructions
Melt butter in large pan and add onion. Saute 5 minutes. Add chicken and vegetables, cook 3 minutes stirring constantly.
While chicken cooks, combine water, broth, and flour. Gradually stir mixture into chicken. Next stir in salt, pepper, and bay leaf. Bring to a boil, then reduce heat and simmer 3 minutes. Stir in tortilla strips and cook 2 more minutes. Remove from heat and remove bay leaf. Serve immediately.
