      Blueberry Oatmeal Bars

Ingredients
¾ cup brown sugar
¼ cup margarine
1 egg
2 tsp vanilla
1 tsp baking soda
3 cups rolled oats, uncooked
½ cup sugar
¾ cup unsweetened applesauce
3 tablespoons skim milk
 
1 ½ cup all-purpose flour
1 tsp cinnamon
1 cup fresh or thawed blueberries

Instructions
Heat oven to 350. Beat sugars and margarine together. Add applesauce, egg, milk, and vanilla. Combine flour, baking soda, and cinnamon. Add to mixture. Mix well. Stir in oats. Stir in blueberries. Spread dough into a greased (no fat cooking spray) 13 x 9 inch baking pan. Bake 30-35 minutes.
I’ve also put tow tbsp filling into greased cupcake tins. Just check after 20-25 minutes for the cupcake version. These even hold together well enough for lunch boxes.
