Heat 1 tablespoon of Olive oil in a non stick fry pan on medium heat. Add Onions and cook for 5 minutes. Add garlic and mushrooms and cook for a further 2 mins.
Add Tomato paste and Corn Flour. Once coated add Red Wine and Beef Stock. Bring to the boil. Simmer for a further 6 - 8 minutes, until reduced.

Serve with Beef fillet, mash potato and sugar snap peas.
