1 lb. sweet Italian pork sausage, cut into 1-inch pieces
2 stalks celery, sliced (about 1 cup)
1 large onion, chopped (about 1 cup)
1 medium green pepper, cut into 2-inch long strips
1 medium red pepper, cut into 2-inch long strips
3 cloves garlic, minced
1 tsp. dried thyme leaves, crushed
1 cup uncooked regular brown rice
1/2 cup uncooked wild rice
3 1/2 cups chicken broth or chicken stock
2 TBLS. fresh parsley, chopped
Instructions
Cook sausage in a 12-inch skillet over medium heat until well browned, stirring often. Stir in the celery, onion, peppers, garlic and thyme and cook until veggies are tender. Stir the brown rice, wild rice and broth in the skillet and heat to boil. Reduce heat to low, cover and cook for 45 minutes or until sausage is cooked thru and rice is tender. Stir in parsley and serve,
