     Spanish Patatas Bravas

Ingredients
8 medium sized potatoes
2 tablespoons olive oil
1 chopped onion
1 bayleaf
2 red chilli peppers
2 teaspoons garlic
1 tablespoon tomato puree
half a tablespoon of sugar (to taste)
1 tablespoon soya sauce
 
1 tin chopped tomatoes (450g)
1 glass white wine

Instructions
Fry the onion in hot oil with the bayleaf until soft. Next, add the chilies, garlic, tomato puree, sugar and soya sauce. Fry for a further 5 minutes.
Stir in the chopped tomatoes and white wine and bring to the boil. Simmer for 10 minutes until cooked. I usually puree the sauce to make it smooth.
Potatoes- Wash, peel and cube the potatoes. Season and and brush with butter. Bake until golden and pour the sauce over the potatoes and serve.
