     Turkey Sausage-Gnocchi Soup

Ingredients
4.5 oz link hot Italian turkey sausage
2 cups water
16 oz pkg vacuum-packed gnocchi
14 oz can fat-free low-sodium beef broth
14.5 oz can Italian-style stewed tomatoes, undrained and chopped
1/2 c grated fresh parmesan cheese
Italian seasoning (to taste)
black pepper (to taste)
 

Instructions
Remove casing from sausage. Cook sausage in a large Dutch oven over medium-high heat until sausage is browned, stirring to crumble.
Add 2 cups water and next 3 ingredients to the pan; bring to a boil. Add Italian seasoning and black pepper to taste.
Reduce heat and simmer 4-5 minutes or until gnocchi float to the top of the pan.
Ladle soup into bowls; sprinkle each serving evenly with cheese.
