     Pork Chops with Mustard Sauce

Ingredients
3 TBLS. olive oil
4 1-inch boneless pork chops (about 1 1/2 lbs.)
Kosher salt and blackpepper
2 shallots, finely chopped
3/4 cup dry white wine
2 TBLS. heavy cream
1 TBLS. Dijon mustard
1 TBLS. chopped fresh tarragon
1 small head frisee, torn into pieces (about 4 cups)
 
1 lemon, cut into wedges

Instructions
Heat oven to 400F. Heat 1 TBLS. of oil in a large skillet over med-high heat. Season pork with 1/2 tsp. each salt and pepper and brown, 2 to 3 minutes per side. Transfer to baking sheet and roast until cooked thru, 5 to 7 minutes.
Meanwhile, add the shallots and 1 TBLS. of the oil to the skillet and cook, stirring often, until soft, 3 to 4 minutes. Add wine and simmer until reduced by half. Add the cream and simmer until sauce just thickens. Stir in mustard.
Top pork with sauce and tarragon. Drizzle the frisee with remaining oil and serve with the lemon wedges.
