     Spanikopita

Ingredients
2 bags of spinach
Athenos feta cheese
8 oz cream cheese
3/4 cup parmesan cheese (shredded or grated)
1/2 cup mozzerella cheese
large eggs (4 or so - until mixture is completely coated)
10 sheets pastry sheets (filo dough)
 

Instructions
finely chop spinach
mix spinach w/ 1/2 cup of feta, cream cheese, 1/2 cup of Parmesan cheese, 1/2 cup of Mozzerella and 4 large eggs. Mixture should be moist.
Oil a large pyrex dish. Place into the dish 5 of the filo sheets. Brush oil or margarine onto the sheets (lightly). Put spinach mixture into the dish. Place 5 more sheets on top of the spinach mixture. Tuck into the dish the over hanging filo dough. Brush the whole spanikopita with oil. On top of it sprinkle Parmesan cheese.
Bake in oven at 375 for 35 minutes or until brown. (Note- if you do not like the spanikopita to be as thick you can use only 1 bag of spinach instead of 2 bags.)
Serving Suggestions
Serve as an appetizer or serve as lunch or dinner w/a salad.
