     Blueberry Muffins

Ingredients
1 1/2 c. flour
1/2 c. soy flour
2 tsp. baking powder
1/3 c. brown sugar twin (splenda)
1/2 tsp cinnamon
1 c. soymilk
2 egg whites
2 Tbsp. oil
1 c. blueberries
 

Instructions
Preheat oven to 375° and grease a 12 muffin cup baking pan.
Mix first five ingredients in electric mixer. Whisk milk, egg, and oil in a seperate bowl. Add to mixer. Blend.
Fold in blueberries. Scoop into muffin cups.
Bake 15-18 minutes or until toothpick comes out clean.
Serving Suggestions
serve with spreadable butter (smart balance)
