     Carrot Cake with icing

Ingredients
1 pkg. yellow cake mix
2 tsp. cinnamon
pinch salt
1 small pkg. vanilla instant pudding mix
4 eggs
1/3 c. oil
3 c. grated carrots
1/2 c. raisins
1/2 c. chopped walnuts
 
1 c. coconut (opt)
Icing-
1 (8oz) pkg. cream cheese, softened
3/4 (6 Tb) butter, softened
1 box confectioners sugar
1 tsp. vanilla

Instructions
Mix cake mix, pudding, cinnamon, salt, eggs, and oil until smooth. Add carrots, raisins, and walnuts.
Bake according to pkg. (2 9in round pans or 9x13) Let cool before icing with Cream cheese icing.
Cream cheese and butter together. Gradually sift in sugar. Add vanilla. Spread over cooled cake.
