     Power-up quinoa salad

Ingredients
1 cup uncooked quinoa
1 clove garlic
.5 cup chopped bell pepper
.5 cup of sliced cherry or grape tomatoes
.25 cup red onion
.25 cup mushrooms
.25 cup cucumber
.25 cup almonds
 

Instructions
Soak quinoa in cold water for 15 min. Drain and rinse. Bring quinoa and 1.5 cups water to boil. Cover, reduce heat, and simmer until water is absorbed, 15 minutes. Remove from heat and allow to sit 5 min.
Remove lid and fluff quinoa with fork. Add garlic, bell pepper, tomato, onion, mushrooms, cucumbers, almonds, and sea salt and black pepper to taste. Serve warm or cold.
