     Vanilla Extract

Ingredients
Vanilla Bean
Vodka
Airtight glass container
 

Instructions
Split bean lengthwise with a parring knife. Loosen seeds of bean with knife (seeds will be seperated from the pod). Pur 1/2 cup vodka in a clean glass jar with a cork stopped or a screw top lid. Submerge bean and seeds, and leave mixture to soak at room temperature for 1-2 months. Once mixture is ready, discard seeds and pod and store in the refrigerator (will keep for one year).
Note- homemade extract has a more delicate flavor than store-bought and is best in dishes where vanilla is a main element (ex. panna cotta, whipping cream, meringue).
