chop up your apple and onion into small bits so that it can mix into your stuffing at the end easily.
sautee them together in a pan with some butter until the apples are soft and the onions are clear.
add salt and pepper to taste to bring out some flavor, but make sure you put those in at the end so it doesn't dry out the onion

Cook the stove top stuffing as the box instructs, but make sure that you under cook it a little bit so that when you put it in the chop and bake it, it doesn't get too dry.
Once you finish the stuffing, mix the apples/onion and stuffing together in a bowl.
Butterfly your pork chop in half like a sub roll, so that you make a pocket for the stuffing

Once the pocket is made, stuff that bitch to your hearts desire.
Once you stuff it make sure that you use a toothpick to close it back up. so it doesn't leak out.
Once you close it up, make sure that you brush the outside of the chop with butter so that it browns and doesn't burn.
Once it's all lathered, add seasoning as you'd like... (salt pepper thyme would be my choices)

Bake the chops in a 350 degree oven (that you've preheated) for roughly 20-30 minutes, check them at this point all ovens will be different, but flip them over and continue to cook until the juices from the chops are clear. Once the juices are clear, you should be done.
I'd top this bitch with a tiny bit of apple sauce, but that's just my flavor.
