     Brussel Sprouts with Bacon & Blue Cheese

Ingredients
3 slices bacon, chopped
1/4 tsp thyme
1 1/2 c onion, sliced
1/3 c chicken broth
1 lb brussel sprouts, trimmed and halved
Blue Cheese
 

Instructions
Heat large skillet over med-high heat. Add bacon, cook until crisp. Remove from skillet and drain oil.
Return skillet to heat, add thyme and onion and saute for 3 min.
Add broth and brussel sprouts, bring to a boil. Cover and simmer about 6 minutes or until crisp-tender.
Spring with bacon and blue cheese.
