     Spaghetti Squash Italiano

Ingredients
1 medium spaghetti squash, cooked and raked out
1 bottle spaghetti sauce (low sugar, low fat or whatever you want)
1 can fire roasted tomatoes
1 can tomato paste
1 cup cooked lean ground beef, turkey or chicken, etc.
1 can mushrooms, drained
1/2 cup chopped onion
1 tbs. chopped garlic
1tsp. olive oil
 
1/2 cup reduced fat mozzarella

Instructions
Saute onions, garlic, mushrooms in the olive oil in a big pot. Add the spaghetti sauce, tomato paste, and beef. Simmer for 15 minutes.
Place squash in a large casserole dish. Pour the sauce on top. Sprinkle with cheese.
Bake at 350 degrees for 15 minutes until cheese is bubbly.
