     Black Bean and Corn Salsa

Ingredients
1 can (15 oz.) black beans, rinsed and drained
1/2 cup frozen corn kernels, cooked and drained, and cooled
1/2 red bell pepper, seeded and finely diced
1/2 green bell pepper, seeded and finely diced
1/2 red onion, finely diced
2 tbs. finely chopped fresh cilantro leaves
1 tbs. extra virgin olive oil
1 tsp. red wine vinegar
1/4 tsp. cayenne pepper
 
Kosher salt and freshly ground pepper

Instructions
Combine the black beans, corn, red bell pepper, green bell pepper, red onion, cilantro, oil, vinegar, and cayenne in a mediuom mixing bowl. Season with salt and pepper to taste. Toss to combine. Cover and refrigerate until ready to serve, up to 1 day in advance.
