     Chili

Category   Entrees - Maindishes
Sub Category   None

Ingredients
2 teaspoons vegetable oil
2 pounds of ground beef
1 onion, chopped
2 tablespoons minced garlic
3 heaping tablespoons chili power
1 tablespoon cajun spice seasoning
1 tablespoon paprika
1 teaspoon cumin
salt and black pepper to taste

1 can red beans
1 can black beans
1 can pinto beans
1/4 cup ketchup

Instructions
Coat the bottom of a big pot with oil. Add the meat and let it cook for a few minutes over medium heat. Don't let it start to stick. When the meat is browning and breaking apart, add the chopped onion and garlic and stir, then add the powdered ingredients all at once. Stir and Cook for about 10 minutes
Stir in the beans. After stirring, the chili should be slightly watery. If it's not, add a little more water. Let this simmer for about 20 minutes or so, stirring occasionally.
After about 20 minutes, add ketchup and more water (if necessary). If you think it needs more flavor, add more chili powder. Let this cook for about an hour and a half, stirring and tasting occasionally.
