     HEB Tilapia with lemon caper sauce

Ingredients
1 to 1 1/2 lb fresh tilapia fillets
1/3 c flour. seasoned with 1 tsp salt and pepper
2 T each butter and oil, divided use
2 T minced shallots
1/2 c white wine or vegetable broth
1/4 c lemon juice
1/4 c capers, rinsed and drained
 

Instructions
Place tilapia on sheet of plastic wrap, dust both sides lightly with seasoned flour. Heat large skillet over medium high heat. Add 1 T each butter and oil. Tilt skillet to blend. Cook fish in skillet in 2 batches. 2 to 2 1/2 minutes per sideor until done, add remaining butter and oil to skillet between batches. Set fish aside and keep warm.
Add shallots and 1 tsp leftover flour to same skillet. Saute 2 minutes or until browned. Stir in wine, lemon juice and capers. Stir and simmer 2 more minutes and pour over fish and serve.
