     Feta Chicken Breasts

Ingredients
1 pkg ( 10 oz) frozen chopped spinach, thawed
8 oz feta cheese, crumbles
1/2 c light mayo
1 clove garlic, finely chopped
6 thinly sliced boneless chicken breasts
1/2 tsp paprika
6 slices of bacon
 

Instructions
Drain and squeeze liquid from spinach. In medium bowl mix together spinach, feta, mayo and garlic.
In batches, place chicken between sheets of waxed paper and pound ot 1/8 thickness. Place about 1/3 c of filling down the center of each chicken breast. Roll up. Sprinkle with paparia and wrap piece of bacon around each piece.
Bake at 325 degrees for 55- 60 minutes. if baking in oven place a rack in a large pan. Or you can grill on pit also.
