12 Ounces Chicken Thighs, skinless, boneless, cut into 2 inch pieces
1/2 Cup Chopped Onion
1 Teaspoon Minced Garlic
1 Cup Chopped Plum Tomatoes
1 Tablespoon Dried Oregano
1/4 Teaspoon Black Pepper
2 Cups Water
2 Cups Low Sodium Chicken Broth
2/3 Cups Uncooked Orzo
1 15 Ounce Can White Beans, rinsed and drained
2 Tablespoons Parsley
1 Tablespoon White Wine Vinegar
1/4 teaspoon Salt
Instructions
Cook bacon until crisp, remove bacon and reserve drippings. Add chicken to drippings, cook 6 minutes. Remove chicken from Pan.
Add onion and garlic to pan and cook 4 minutes. Add tomatoes, oregano and pepper; cook for 1 minute. Return bacon and chicken to pan. Stir in water and broth. Bring to a boil add orzo. Cook for 9 minutes. Add beans and heat 5 minutes.
