Boil the wine until it reduces about half. Light the wine to burn
excess alcohol when hot.

Trim the short ribs of fat. Then mix all short ribs in a bowl with
Olive Oil, Salt and Pepper. Heat the dutch oven to medium. Then
prepare another bowl with flour. Then proceed to cover each short
rib in flour and sear them all for about 5min.

After the searing, add the chopped garlic cloves, onions, and
carrots. Wait a few minutes for searing then add the wine. Now add
the tomato paste.

|
Continue stirring everything then add the brown sugar and
remaining spices. Add 2 cups of water. Leave for 1 hour to simmer.
