     Brussel Sprouts with almonds & bacon

Ingredients
1 lb brussel sprouts
1/3 lb bacon, cut into 1/4 inch pieces
1 red onion, chopped
1/4 to 1/2 cup almonds
1/4 cup chicken stock
salt and pepper
 

Instructions
cut brussel sprouts in half and then thinly slice. Cut bacon into 1/4 inch pieces. Saute bacon until brown. Remove with slotted spoon and set aside. Remove all but 1 TB bacon fat.
Turn to hi, add red onion and cook till it begins to brown. Add bacon and almonds. Cook until almonds begin to brown. Add brussel sprouts and chicken stock. Toss to combine. Stir in approx 3/4 tsp salt (to taste) Add pepper to taste. Cook on high 3 to 5 minutes until brussel sprouts are done.
