     Twiced Baked Poatoes

Ingredients
4 baking potatoes, washed
4 slices of turkey bacon, chopped and cooked until crisp
1 cup light sour cream
1/2 cup shredded cheddar cheese
salt and pepper
 

Instructions
Preheat oven to 400 degrees. Bake potatoes for 1 hour until tender. Let cool and then cut in half, scoop out flesh, leaving a 1/4 inch shell and transfer flesh to a large bowl. Add bacon, sour cream and cheddar cheese and mix well until blended. Season with salt and pepper.
Spoon mixture back into shells and discard any remaining mixture. Sprinkle with a little more cheddar cheese. Arrange shells on a baking sheet. Bake 20 minutes or until golden brown.
