2 Tablespoons Chipotle Peppers in Adobo Sauce, Chopped
2 Teapoons Adobo Sauce from can of Chipotle Peppers
1 Tablespoon Lime Juice
1/3 Cup Fresh Cilantro, chopped - optional
Instructions
Preheat oven to 350 degrees. Place Chicken in a baking dish and surround with red onion wedges. Drizzle with Olive oil and sprinkle with salt and pepper. Bake 20-25 minutes until chicken is cooked through. Let cool 15 minutes on baking sheet and then transfer to a cutting board. Cut chicken into bite sized cubes and coarsely chop onion. Transfer chicekn and onion to a larger bowl. Let cool to room temperature and add red peppers.
In a small bowl, combine sour cream, mayonnaies, chipotles, adobo sauce and lime juice. Stir to combine. Pour over chicken and oinions and toss evenly to coat. Sprinke with cilantro.
