     Crunchy Pecan-Crusted Chcicken Fingers

Ingredients
16 Saltine Crackers
1/4 Cup Chopped Pecans
1 Teaspoon Salt
2 Teaspoons Paprika
1/4 Cup Flour
1 Egg
1 1/2 Pounds Chicken Breast, Boneless, Skinless, cut into strips
 

Instructions
Preheat oven to 425 degrees. Spray a wire rack with cooking spray, and place on a foil lined tray.
Combine everything except egg and chicken in a medium bowl. In a 2nd bowl beat egg lightly with 1 Tablespoon water.
Dip Chicken strips into egg then dry mixture. Arrange on rack and bake 18- 20 minutes until golden brown.
