     Veggie Skillet Supper

Ingredients
2 Tablespoons Extra Virgin olive Oil
2 Cups Sliced Leeks (about 2 Large)
12 Ounces Fingerling potatoes, cut in half lengthwise
2 Cloves Garlic, minced
1 1/4 Teaspoon Smoked Paprika
1/2 Teaspoon Salt, divided
4 Cups Fresh Swiss Chard or Spinach, trimmes and sliced, divided
4 Eggs
1/4 Cup Shredded Gruyere Cheese
 

Instructions
Heat a large skillert over medium heat. Add oil to pan. Add leak and cook 8 minutes, stirring frequently. Ass potatoes, garlic ad cook 15 minutes until potatoes are tender. Stir in 1 Teaspoon paprika, 1/4 teaspoon salt and 1/4 teaspoon pepper. Add chard/spinach and cook 4 minutes, stirring constantly.
Using a spoon push aside ingredients to make 4 holes for the eggs. Crack one egg into each space, sprinkle with remaining salt, pepper and paprika. Cover and cook 5 minutes. Sprinkle cheese over potato mixture, cover and cook an additional 3 minutes or until eggs are desired doneness.
Serve 1 1/2 cups veggie mixture with one egg.
