In a small bowl combine forst 4 ingredients. Cut a horizontal slit through the thickest part of each chicken breast, to form a pocket. Stuff 2 Tablespoons of the cheese misture into each slit, anc close opening with toothpicks or skewers. Sprinkle each breast with remaining salt.
In a large nonstick, skillet heat 1 tablespoon Oil. Add checken breasts stuffed side up to pan and cook for 2 minutes. Remove Chicken from pan and place on a baking sheet, broil chicken for 8 minutes until done.
In same skillet as chicken was cooked in, heat remaining oil over medium-high heat, add red pepper and spinach and cook until wilted. Stir in remaining salt.
