     ScoKo's stuffing - first draft

Ingredients
gizzards, liver ect.. from turkey
Rum and Brandy
Seasoning- s/p, sage, thyme, parsley, rosemary, etc.
chestnuts
oysters
mushrooms - oyster and shitake
onions
leeks (maybe)
toasted walnuts (maybe)
 
craisins
celery
Stuffing mix, corn bread stuffing mix, old bread, crackers
granola
shallots

Instructions
From Dad's recipe- Different from above - But follow cooking and look below for suggestions. Mince all miscellaneous pieces (gizzards, liver ect..) Trim excess fat from bird and mince also. Put 2 ounces of olive oil and 1 stick of butter into large pot. Get hot and melt butter and add chopped fat and let cook for 5 min. and add minced gizzards ect.. If desired add 2 or 3 cut up Italian sausages. let cook for 7 minutes. Stirring occasionally. Add and cook for short time- 1 or 2 onions Italian seasoning Salt and Pepper to taste. Rum and Brandy. Add a bit of marinade from turkey. Seasonings to taste. Turn off heat and add- Stuffing mix corn bread stuffing mix old crackers dried bread (anything old you want to get rid of) Mix thoroughly.
