     ScoKo creamed spinach

Ingredients
2 pounds fresh spinach, washed and stems removed
1 tablespoon unsalted butter
1/2 cup finely chopped shallots
1 teaspoon minced garlic
3/4 teaspoon salt,
1/2 teaspoon freshly ground black pepper
1/4 teaspoon nutmeg
1/4 cup heavy cream (or less)
1/4 c. parmesan
 
olive oil

Instructions
2 choices either boil spinach and set aside and press liquid out (don't cook all the way). Or Heat oil in a large nonstick skillet over medium-high heat. Add shallot (or onion); cook, stirring, until fragrant, about 30 seconds. Add spinach and cook, stirring, until just wilted, about 2 minutes. - set aside
Melt the butter in medium saute pan over medium-high heat. Add the shallots and garlic and cook, stirring, until soft and fragrant, about 2 minutes. Add the spinach and cook, stirring, just until the liquid is released. Add the cream, salt, pepper, and nutmeg, , and cook until the cream is reduced by half, about 4 minutes. Remove from the heat, parmesan sprinkle, and serve immediately.
