Preheat oven to 350 degrees. In a large bowl, lightly coat potatoes with oil. Season with salt and pepper. Spread evely on a large sheet pan. Bake for 25 to 35 minutes or until tender, cool.
Combine bacon, onion, parsley and ranch dressing; toss with potatoes. Season with add'l salt and pepper. Keep refrigerated.
