     Chicken with Cashews

Ingredients
2 lb of chicken
1-2 TBS ginger (pink)- finely chopped
1 small onion - chopped
sake (any cheap brand)- 1/4 cup for marinade
Sauce-
6 TBS soy sauce
4 TBS rice vinegar
4 TBS sake
4 TBS sugar
 
2 TBS corn starch
1 boullion cube

Instructions
Cut chicken in very thin slices. Marinate in 1/4 sake, garlic, and chopped ginger for 1 hour or more.
Cook chicken and onion on stove at high hear until all moisture is gone.
Add cayanne pepper to taste.
Add sauce and cook until bubbly. Add cashews.
