     Pepper Steak

Ingredients
3 cup hot cooked rice
1 lb lean beef round steak, cut 1/2 inch thick
1 TBS paprika
2 TBS butter/margarine
2 cloves garlic, crushed
1 1/2 cup beef broth (bouillion)
1 cup slice green ionions
2 green peppers, cut into strips
2 TBS cornstarch
 
1/4 cup water
1/4 cup soy sauce

Instructions
Pound steak (if you want). Cut into 1 inch wide strips. Sprinkle meat with paprika and allow to stand while preparing other ingredients.
Use large skillet and brown meat in butter. Add garlic and broth. Cover and simmer until tender (30 mins or more). Add water if getting dry.
Stir in onions and green peppers. Cover and cook 5 minutes more.
Blend cornstarch, water and soy sauce. Stir into meat mixture. Cook and stir until clear and thick. Serve over rice.
