Preheat oven to 375°F.
Spray 2 1/2 x 4 1/2 x 8 1/2 “ loaf pan with nonfat
cooking spray.
Combine first 6 ingredients in a small bowl. Set
aside.
Using a mixer, cream butter in a large bowl.
Gradually add sugar, beating well.
Beat in milk, orange juice, egg, vanilla extract,
and orange rind.
Stir in carrots, raisins, and walnuts.
Add reserved dry ingredients. Mix well.
Pour batter into prepared loaf pan.
Bake for 45 minutes, or until a knife inserted
into center of loaf comes out clean.
Remove from pan and cool on wire rack before
serving.
