     Lemon Bars Delux

Ingredients
CRUST
2 cups all-purpose flour
1/2 cup confectioners' sugar, plus additional for sprinkling
2 sticks (1/2 pound) butter
FILLING
4 beaten eggs
2 cups granulated sugar
1/3 cup fresh lemon juice
1 teaspoon baking powder
 
1/8 teaspoon salt
1/4 cup all-purpose flour

Instructions
Preheat oven to 350 degrees.
Whisk together 2 cups of the flour and the confectioners' sugar. Cut in the butter until the mixture clings together. Press the dough into a 13 X 9 X 2-inch baking dish. Bake for 20 to 25 minutes or until lightly browned.
Meanwhile, beat together eggs, granulated sugar, and lemon juice. Mix the remaining 1/4 cup flour with the baking powder and salt; stir into the egg mixture and pour over the hot baked crust. Bake for 25 minutes longer. Remove from the oven and sprinkle with confections' sugar. Cool. Cut into 1 1/2-inch bars.
